
In the past there where no freezer in the country, so countrymen
used to keep the meat in oil.
And the roasted chine of pork, kept in oil, was an excellent way for
eating meat during all the year, even in summer.
According to that tradition, we prepare tasting rolls of roasted chine,
spicy and flavoured with salt, pepper, garlic and rosemary, kept in
oil...
An excellent meal, lovely to be tasted with mixed salad.
